caramelized fall topping

Let's talk waffle toppers, shall we? I know I'm getting back into my old groove when these waffles happen more than once in a single week. I had a crew of breakfast kids on Friday, so something special was in order. Since fall is truly here, Apples are often on hand. I caramelized some with a bit of cinnamon and became an instant superhero.

The next waffle morning was met with total disappointment that the last of the apples had been eaten. Think. Think. Ahh yes, we had a few last pears on our tree. I ran out (in the rain, no less) and had them sauteing in buttery goodness in no time. You, too, can be a fall kitchen super hero with only a few simple ingredients and a frying pan.
The last of the pears picked in the rain.

Caramelized Fall Topping

Ingredients:
  • a couple chopped pears or sliced apples
  • splash of lemon juice
  • a few tablespoons of butter
  • a handful of cane sugar
  • several generous dashes of cinnamon
  • (a smidge grated ginger if using pears)
  • a tablespoon or so of apple cider
Make:
  1. Melt butter in heavy frying pan
  2. Add fruit and lemon juice and saute for several minutes
  3. Sprinkle in the rest of the ingredients
  4. Stir until the fruit softens and caramelizes- 5- 10 minutes
The house will smell terrific, and everyone will be begging to know when it's ready. Top off waffles, pancakes or yogurt for breakfast. I'm thinking another batch might need to be made for an evening bowl of vanilla ice!

  3. Running out in the rain to pick breakfast ingredients from your garden? You ARE a super-hero! Caramelized fruit is so great on iced cream, waffles, pancakes, oatmeal, a spoon... :)

  5. Oooh yummy! We have oat bran or steel cut oats every morning. The pumpkin butter was getting kind of old. I think this will be a perfect substitution. Thank you Maya!

  6. Cinnamon's got the right idea since I'm not currently doing the pancake and waffle business. A hard proposition with fall coming on... but I think it will do just fine on somme hot cereal.
I loved your posts about Squam. I don't think I was able to comment with my super duper ridiculously slow internet.

  7. Oh this does look yummy!
I have a question about your waffle iron though. I've been trying to find one that doesn't have a non stick coating on it and was thinking I was going to have to find a vintage one. Have you found one?

  8. Joey, vintage is the way to go. Healthwise, I'd look for cast iron, but we used to have an old stove top cast iron one from a garage sale, and it burned every waffle. We've LOVED our William Sonoma one for 15 years, for better or for worse. It's our little indulgence. If you have any great successes, though I hope you'll let me know!xo
