lemon blueberry zucchini muffins


Summer breakfasts just keep getting better and better! These muffins are made constantly during the weeks when the zucchinis are out of control and berries are everywhere. I came up with the recipe when my son was three, and each bite is full of summer morning memories... I've even shared them with you before, right here. Today's were overloaded (in a good way!) with fresh blueberries, picked on a mama/daughter date. We felt a bit like Sal and her mother... bears were definitely discussed.

Those gorgeous apricots were gathered by my son with Laura and her daughter... thank you!! She's been doing some lemon blueberry baking, herself.


a little suggestion: to turn these muffins into a dessert( with hidden veggies)... substitute chocolate chips for berries and switch the lemon to orange zest! mmmm!

  3. I am loving all the blueness here and hope these few perfect summer days we have been having will last a little ( or a lot ) longer.
    ps my eldest loved the sal and her mother story and she had an encounter with a cub just like sal did when we were camping one and picking blueberries in Algonquin Park.

  5. Those buckets of blueberries would be worth hundreds of dollars here... I'm so envious and my baby girl who loves blueberries best of all, but has to make do with frozen ones, would be too!

  6. ooooh - yum! I'm definitely trying these - I shall have to use raspberries instead of blueberries (they are $8 per hundred grams here!). Zucchini is one of my favourite vegies.

  7. Thank you for the recipe. This is the first year my sister planted zucchini. Now we have lots of zucchinis we don't know what to do with. Since it is a new vegetable in Estonia there are not very many recipes in cookbooks or magazines. It is going to be fun to try this muffin recipe this weekend.

  8. those sound so yummy. I can't wait next year when my blueberry bushes start producing. I just planted them this year, and I was excited to get a few handfuls of blueberries! Living in suburbia, Texas it's fun to have fruit growing in my front yard!

  11. Those look delicious! I got a recipe for zucchini chocolate chip muffins a while back that was a big success. It's from allrecipes.com. Blueberries are another good idea.

    I read somewhere that you can actually grate the zucchinis and freeze them that way, so the muffin making can continue into non zucchini season.
