buttermilk apple cinnamon muffins

I know it's going to be a good day when it begins with batch of muffins. The house smells terrific, and it takes care of both breakfast and snacking for my kids throughout the day. We pass Indian Creek Orchard every day to go home, so there is no shortage of apples in our house this time of year. With some leftover buttermilk in the fridge,  I decided to try it in my usual muffin batter... I think streusel would be the perfect addition next time. Which will probably be tomorrow, since they didn't even last an entire day! And I don't eat wheat- so that's just kid eating going on!
BUTTERMILK APPLE CINNAMON MUFFINS
Ingredients:
2 1/2 cups whole wheat pastry flour
2 teaspoon of baking powder
1 teaspoon of baking soda
1/2 teaspoon of salt
3/4 cup of brown sugar or maple syrup
2 eggs lightly beaten
1/3 cup of melted butter
1 1/3 cup of buttermilk
1 large apple cored and diced (no need to peel)
1 teaspoon of cinnamon
1 tablespoon of sugar for top or batch of streusel

Make:
-Preheat over to 375 degrees
-Mix dry and wet ingredients separately and then combine just till mixed
-Add apples at the end
-Pour into a well-greased muffin pan 
-Top with sugar or streusel and bake until golden
