Good morning! Happy Vernal Equinox! Hello Spring! Welcome new beginnings!
I tiptoed outside this morning and began the day with an egg- to honor the new life and growth that comes with this season... and to bring my grandmother's presence closer to me. I haven't seen her since the fall, and I'm missing her terribly. My grandmother made my ultimate comfort food and favorite breakfast as a child. She combined little pieces of buttered toast with tiny bits of fresh bacon into a little egg cup. It was then topped with a soft boiled egg. I would eat it with a tiny spoon, savoring each bite. To this day, just the thought of it makes me happy. My soft boiled eggs are never quite as good as hers, but I keep trying... my new little egg cup makes all of my attempts delicious anyway.

LOVE your little egg cup! Which is reminding me that I have some tucked away that I'm going to get out. What a fun way to say welcome to Spring.

Isn't it always the little things that really remind you of the person? My Gran used to make us "birds nests". Basically it was toast with egg white whipped until it was thick and then piled up on the toast with a small well in the centre where you plopped the egg yolk. Bake in the oven until the whites start to brown. Wow I haven't had one in years, maybe I'll make one for lunch!
