We'd heat them up and put butter and salt on them as a quick snack. These "salt tacos" are still the epitome of comfort foods for my brothers and me.

If you don't have a tortilladora, you can use two wooden cutting boards to press tortillas. I just lay one on top of the other and press down with both hands on it, but my uncle, who taught me this trick, put a perfectly spaced hinge and a handle on his cutting boards.Maiz Connollyhttps://www.blogger.com/profile/02536913951109879716noreply@blogger.comtag:blogger.com,1999:blog-6777506989220366832.post-89415907550796765822011-04-22T11:09:51.522-04:002011-04-22T11:09:51.522-04:00I love corn tortillas, especially those made with ...I love corn tortillas, especially those made with fresh corn masa!

Lovely photos :)Tortilla Fanhttp://quesadilla-makers.com/noreply@blogger.comtag:blogger.com,1999:blog-6777506989220366832.post-71703598461899991612011-04-17T21:37:25.149-04:002011-04-17T21:37:25.149-04:00As always, we are on the same wavelength. As for the flavor most reminiscent of my childhood, definitely rice pudding. Rice pudding with lots of cinnamon and a little nutmeg and ginger. It was good for dessert after dinner and even better for breakfast the next morning. It seems no matter how large the potful, there was never any left over by the time dinner rolled around the next night.DKhttps://www.blogger.com/profile/07467528935667503979noreply@blogger.comtag:blogger.com,1999:blog-6777506989220366832.post-75663155136004385062011-04-13T16:50:38.507-04:002011-04-13T16:50:38.507-04:00Thanks so much for the tips on moisture. I can see that it's crumbling. Try making the dough to a point where it feels almost too wet. I see that you're pressing it out on some kind paper. Instead, split open a quart size ziplock bag down the side seams and use that by placing the ball between the sides of the bag.

Now that the dough is wetter, it will spread out easier and more evenly. You won't get the jagged edges. Even though it's wet, the plastic bag lets you peel it off without ripping the tortilla.

Don't try to use saran wrap or something similar. You need the thickness of the plastic of a ziplock bag.Anonymousnoreply@blogger.com
